How about some Texas Caviar for the weekend?

Texas Caviar

1 can black beans, rinsed, drained
1 can black eyed peas, rinsed, drained
1 can shoe peg corn, rinsed, drained
1 jar yellow ring peppers, drained, chopped
1 small red onion, diced
1/2 c. olive oil
1/2 c. apple cider vinegar
1/2 c. sugar

Place beans, peas, corn, peppers, and onion in an airtight container. Heat olive oil, vinegar, and sugar until sugar is dissolved. Pour over vegetables and refrigerate overnight. Serve with chips, scoops, and a cold drink!
